Hock is the joint that attaches the pig's leg to its foot. As a joint, hock is quite tough and filled with connective tissues and ligaments. That said, hock is coveted by some of the world's best chefs because it makes for an absolutely incredible broth when simmered with water, veggies, herbs, and spices.
