This lamb steak comes from the shoulder of the animal. It's larger and thicker than the lamb chop cut from the rib and has a decent amount of good meat. This cut requires significantly less cooking time than other cuts... we recommend marinating before cooking for 3-4 minutes (on each side) on a cast iron...
