The best part of the chicken sold on its own. You're going to want to make chips out of thin, low-fat (compared to pork) skin. Just scrape away any extra fat from the underside of the skin, dry the skins with a paper towel, and season lightly. The skin will fry in its own fat leaving you with an addictive chip (that should be stored in the refrigerator).
