This onion was stored dirty indoors after harvest but washed prior to delivery. Pungent when raw, these fresh onions develop a mild, nutty flavor once cooked. For this reason, yellow onions are most commonly cooked. We recommend chopping and using as a flavor enhancer for your soups and stews. You can also carmelize these nutty onions and incorporate them into your braise, pasta sauce, or casserole. Pair well with creamy sauces, curries, and red wine.
