This Italian eggplant variety is perfect for eggplant parm. Roast the eggplants in the oven for 25 minutes, then layer a baking pan with the roasted eggplant, some herbaceous tomato sauce, parmesan, and mozzarella. Finish it off by baking in the often on 425 for around 20 minutes. A new family favorite!
How to store: Wrap in towel and place in open plastic bag in crisper of freezer.
